    Who should take this course?

    Level 3 Food Safety is designed for kitchen staff, supervisors and managers who work in a food environment in any industry sector.

    Course duration

    The level 3 food hygiene online course takes approximately 12 hours to complete. Participants can take the course at their own pace, whenever or wherever it suits them.

    Course delivery

    Level 3 food hygiene training is delivered as eLearning, through our virtual classroom or face-to-face at a location of your choice.

    • The principles of personal hygiene, including training requirements, to maintain food safety standards.
    • How to design and maintain premises and equipment to support food safety compliance.
    • Effective cleaning, disinfection, and pest management procedures to eliminate risks.
    • The structure and application of food safety management systems, including Hazard Analysis and Critical Control Points (HACCP).
    • How to implement and monitor controls across the food supply chain, from purchase to service.

    Course Overview

    1. Introduction to food safety

    Understanding the importance of food safety and how it protects public health. Exploring key principles, such as food safety hazards, responsibilities, and the legal framework.

    2. Microbiological hazards

    Identifying the risks posed by microorganisms and implementing controls to prevent contamination. Examining how foodborne pathogens can cause illness and understanding their growth conditions.

    3. Contamination hazards and controls

    Learning about physical, chemical, and biological contamination, as well as effective prevention and control measures to maintain food safety.

    4. Food poisoning and prevention

    Understanding the causes and symptoms of food poisoning and how to prevent is. Examining the importance of food hygiene practices to mitigate risks.

    5. Personal hygiene and training

    Exploring the role of personal hygiene in food safety. Understanding training requirements to ensure all staff meet high standards of hygiene and cleanliness.

    6. Premises and equipment

    Designing and maintaining food-safe premises and equipment to prevent contamination. Learning best practices for layout, maintenance, and compliance.

    7. Cleaning and disinfection

    Examining effective cleaning schedules and disinfection procedures to maintain hygiene standards. Understanding the importance of sanitisation in food preparation areas.

    8. Pest management

    Identifying common pests and their risks to food safety. Exploring strategies for pest prevention, monitoring, and control in food businesses.

    9. Food safety management systems (HACCP)

    Gaining in-depth knowledge of Hazard Analysis and Critical Control Points (HACCP) systems. Learning how to develop, implement, and monitor a food safety management system.

    10. Controls and monitoring from purchase to service

    Ensuring food safety throughout the supply chain by applying effective controls at each stage, from purchasing raw ingredients to serving safe food. 

    11. Food safety legislation and enforcement

    Understanding UK food safety laws, regulations, and enforcement processes. Exploring the responsibilities of food businesses to comply with legal standards and avoid penalties.

    Assessment

    At the end of the Food Safety course there is a multiple-choice assessment to complete which consists of 45 questions. Participants must achieve a pass mark of 80% (36/45).

    Certificate

    On successful completion of the course participants will receive a Level 3 Food Safety Certificate.

    eLearning

    With eLearning, participants can access course materials at their convenience, fitting around their commitments.

    • Engaging. Our courses engage learners through multimedia elements, simulations and interactive exercises. This encourages active participation and increases learning retention.
    • Tracking. Our learning management system, SHINE, enables administrators to track learners’ progress, the courses they have attended and the dates, which supports health and safety compliance.

    • Assessment. There are multiple-choice quizzes throughout the courses so learners can check their understanding as they progress and consolidate their learning.
